Homemade, hot crusty yeast bread...



Coolrise Family Style White Bread

 

11-12 ½  cups all purpose flour

3 pkg active dry yeast

½ cup sugar

2 Tbsp salt

1/3 cup softened butter

4 cups milk

1 cup water

cooking oil

 

Combine: 4 c. flour, dry yeast, sugar, salt in large bowl. Stir to blend. Add butter.

Heat: milk and water until warm to the touch (not scalding)

Add:  warm liquids to ingredients in bowl

Beat: with electric mixer at medium speed for 2 minutes, scrape bowl as needed.

Add:  2 cups flour, beat on high for 2 minutes or until thick and elastic

Graduallystir in just enough of the remaining flour with wooden spoon to make a soft dough which leaves sides of bowl. Turn out onto floured board

Knead5-10 minutes until dough is smooth and elastic

Coverwith plastic wrap and a towel

Let Rest:  20 minutes on board. Punch down.

Divide:  Dough into 3 or 4 equal pieces, shape into loaves.

PlaceIn 3 greased 9X5Xx3” bread pans or 4 greased 8 ½ X4 ½ X2 ½” bread pans.

Brushdough lightly with oil, cover pans lightly with plastic wrap

Refrigerate2 to 24 hours. When ready to bake remove from refrigerator, uncover.

Let Stand: 10 minutes while preheating oven. Puncture any surface bubbles.

Bake:  at 400 degrees for 30-40 minutes or until done.

Remove: from pans immediately and brush with butter.

Yield: 3 or 4 loaves.
